We mostly make our own foils but if you know the section, cord and thickness you can get foils made for uk.  In the UK 'Bloodaxe boats' and 'ardvark' will make good foils. Links are available on the main cherub class website.

If you are making you can use wood or a high density foam as a core material.  If using a wood core we generally go for western red cedar which is one of the lightest woods.  You can use lower density foams but be careful at the point where the foil exits the hull. Some extra stiffening here will stop the foil from breaking.

There is quite a bit of information on how to build foils here
